Carrot Pudding


1 cup grated raw carrot (fine)

1 cup grated raw potato (course)

1 cup sugar

1 ½ cups flour

1 tsp soda

1 cup raisins

1 cup currents

½ cup margarine

½ tsp salt


Mix sugar and margarine. Dredge fruit with flour. Combine all ingredients and steam for 3 hours. Serve with hot sauce..

Makes 1 dozen.


Rum Sauce:

½ cup sugar

1 tablespoon cornstarch

Dash salt

Dash nutmeg

1 cup boiling water

2 tablespoons butter or margarine

½ cup rum


Mix sugar, cornstarch, salt and nutmeg; gradually add water, and cook over low heat until thick and clear. Remove from heat and add butter and rum. Blend thoroughly.


Makes 1 1/3 cups.
