Finnish Fruit Soup
1 cup juice (blueberry or any other)
4 cups water
1 apple peeled and cubed
½ cup raisins
½ cup sugar
Dash cinnamon
2 tablespoons cornstarch
3 tablespoons water
Simmer fruit in water until tender, about 10 minutes.
Stir in sugar and cinnamon, Mix cornstarch with cold water; add to fruit mixture.
Cook over medium heat, stirring constantly, until thickened. Chill.
Serve cold plain, with cream or ice cream.
P.S. Can add other fruit, (pears etc) too.
And I usually add about a cup of raisins, instead of ½ .
