Johnnycake
1 1/2 cups golden corn meal
1/2 cup sifted flour
1/4 cup sugar
1/2 tsp. salt
4 tsp. baking powder
1 egg
1/4 cup shortening (room temperature)
1 cup milk
Sift together dry ingredients in a medium sized bowl. Add milk, egg and shortening.
Beat with a rotary egg beater until smooth, 1 minute. DO NOT OVERBEAT. Pour batter into
greased 8" square pan.
Bake at 425° for approximately 20 minutes.
