Irene's Lemon Pudding
2 Tblsp. Flour
1 cup sugar
2 tblsp butter
2 Eggs
1 cup milk
Juice and grated rind (1 tblsp) of one Lemon
Mix flour and sugar in a shallow casserole
Dish. Cream butter into mixture. Separate
eggs, beat yolks and milk together. Add to
mixture in casserole dish and beat until
smooth. Add lemon juice and rind. Beat
egg whites till stiff. Fold into mixture. Set
casserole in dish of hot water. Bake 35 to 40
minutes at 350°F. Brown lightly under
broiler Serves 5.
