Morning Glory Muffins
2 cups all-purpose flour
1¼ cups sugar
2 tsp. Baking soda
2 tsp. Cinnamon
½ tsp. Salt
2 cups of grated carrot
½ cup raisins
½ cup chopped nuts
½ cup coconut
1 apple peeled, cored and grated
3 eggs
¾ cup oil
2 tsp. vanilla
Combine dry ingredients. Stir in grated carrot, raisins, nuts, coconut, and apple.
Beat eggs, oil, vanilla. Combine all ingredients until moistened. Fill large muffin tins to the top.
Bake at 350° for 20 minutes.
Makes 14 large muffins.
