Pineapple Upside Down Cake


2 tablespoons margarine

½ cup brown sugar

1 tin pineapple chunks, drained

6 maraschino cherries, cut in fourths

1¼ cups flour

½ cup sugar

2 teaspoons baking powder

½ teaspoon salt

1/3 cup shortening

½ cup minus 1 tablespoon pineapple syrup

1 egg


Melt margarine in 8X8X2 inch pan. Stir in brown sugar. Place pineapple chunks in pan. Add cherry pieces. Beat egg and shortening and sugar. Add dry ingredients and syrup and mix well. Pour over pineapple. Bake in 375° oven for 45 minutes. Let stand for 5 minutes. Turn up-side-down.
