BRINE
1 QT WATER
½ CUP SALT ( PICKLING)
½ CUP WHITE SUGAR
3oz. RUM
1oz. LEMON JUICE
3 CLOVES GARLIC
3 TBSP PICKLING SPICE
¼ TSP LEMON PEPPER
3 BAY LEAVES
ALTERNATE BRINE
1 QT WATER
½ CUP BROWN SUGAR
½ CUP SALT (PICKLING)
½ TSP GARLIC SALT
¼ TSP PEPPER
½ CUP WHITE WINE
1 CUP SOYA SAUCE
¼ TSP TABASCO SAUCE
SAME INSTUCTIONS FOR BOTH BRINES
SOAK FOR 4 HOURS. WASH IN COLD WATER, DRY WITH PAPER TOWELLING.
SMOKE WITH WOOD CHIPS FOR 4 TO 6 HOURS.
